My mom makes them real dense, like the second one from the left, bottom row. Some people say light and airy is the way to go. Fuck that. You want a matzoh ball to be a meal in and of itself.
The funny thing is, she says the secret is to use a bit of seltzer in your recipe. That’s supposed to make them light. Well, it doesn’t. But it makes them delicious, and the perfect consistency.
